The problem of malnutrition is rampant in India. The high incidence of nutritional problems among weaned infants and young children call for effective steps to improve the nutrient content and quality of the Indian diets. Recently, faba bean (Vicia faba L.) has been positively considered as a noval leguminous protein source by the nutrition experts as a substitute after soybean products to meet the challenge of malnutrition in developing countries.- Haemato-Biochemical and Histological Changes in Rats upon Dietary Supplementation of Cultivated Mushroom (Pleurotus Florida)

Biochemical compositional variations were indicated among mushroom of the same species (Pleurotus florida) when cultivated on four variable straw substrates. The blood proteins of growing rats, when fed on cereals supplemented with paddy grown P. florida at 25 percent or 50 percent levels, were resolved differentially on polyacrylamide gel electrophoresis.- Dietary Analysis and Assessment of Nutritional Status of Pre-School Children of Urban and Rural Population

The nutritional status of community is the sum of the nutritional status of the individuals who form that community. Dietary assessment and mid arm circumference measurement have been found the most effective procedures to assess the nutritional status of pre-school children, as has been studied by earlier workers (Easwaran et al, Indira Bai et al, Thimmayamma et al and Bhargava.- Effect of Processing on Anti-Nutritional Metabolites and In-Vitro Protein Digestibility of Local Varieties of Horsegram (Douchos biflorus L.) of Madhya Pradesh

Horsegram (Dollchos biflorus L), a leguminous seed of high protein content with a remarkable level of lysine and minerals, has been identified as one of the potential food sources by the National Academy of Sciences of the United States of America. Relative biochemical composition of some local varieties of horsegram in Madhya Pradesh has recently been reported4 and are found to contain reasonably good amount of protein (21-23%), minerals and essential amino acids.- Electrophoretic Fractionation of Blood Proteins of Rats upon Dietary Supplementation of Cultivated Mushroom (Pleurotus florida)

In recent years, mushroonns are being projected as a potent protein food source, rich in essential amino acids and minerals. An assessment on their functional properties has also confirmed their acceptability as a food source. Following feeding on mushroom diet, plasma proteins tend to be increased. However, a very limited data is available on the quantitative or qualitative changes in the protein pattern after mushroom diet as resolved by gel electrophoresis. Changes in the protein pattern during the development of fruit body of Calocybe indica has also been reported. The present study was therefore, designed to investigate the changes in the components of blood proteins of growing rats electrophoretically after a low or high mushroom diet. This may help in establishing the nutritive status of these food proteins.- Electrophoretic Fractionation of Water Soluble Proteins of Raw and Processed Horse Gram (Dolichos biflorus L.)

Horse gram (Dolichos biflorus L.) is being cultivated as a source of protein in the human diet and as livestock fodder. Unfortunately, like other legumes, horse gram is also not free from antinutritional or potentially toxic components.- Biochemical Composition of Some Local Varieties of Horse Gram (Dolichos biflorus L.) in Madhya Pradesh
